PARKING

We are located in a parking-friendly area. Limited parking is available next to the restaurant. Street parking is available. However, we have a parking lot across the street and a very short walk to Guacaya Bistreaux's front doors. The parking lot is adjacent to the Hewing Hotel. The lot is available after 4 pm and costs $10 for the night. Click on parking instructions for directions. See you soon!

Welcome to Guacaya Bistreaux

Traditional meets modern in this new-age Caribbean restaurant, tucked away in the heart of the North Loop. It is named after the mountain in the small town of Penonome in Panama. Guacaya pulls inspiration from mainland Panama, Jamaica Puerto Rico, and all the islands in between. The passion project of Panamanian native Chef Pedro Wolcott, Guacaya’s menu explores the cooking techniques, ingredients, and many expressions of vibrant food across the entire region. This showcases Chef/owner Pedro Wolcott's upbringing between Panama & Southern Louisiana (New Orleans).

The space boasts a stunning bar, a robust cocktail program, and a fun wine list focusing on small producers, built to pair with Caribbean flavors & Southern Louisiana cuisine.

A 21% Hospitality charge is added to all dine in guests checks. A hospitality charge model helps us provide a consistent living wages for all members of our team in a way traditional tip system cannot.

We keep the tip line on our guests checks because some customers may ask if they can leave extra for those who served them. That is incredibly gracious! But not expected.

Pursuant to Minn. ;177,23 Subd 9, this charge is not gratuity for employee service and is property of the restaurant to us as it sees fit.

Chef Pedro Wolcott

Chef Pedro Wolcott is a renowned expert in contemporary Latin cuisine, who blends Latin, Caribbean, and Southern ingredients to create exclusive flavors. He comes to Minneapolis from New Orleans, bringing a vibrant and flavorful addition to the Twin Cities dining scene. Chef Pedro has worked at hotels and casinos in Las Vegas, and some of the finest restaurants in New Orleans. He pays homage to his Panamanian roots by incorporating Afro-Caribbean cuisine. Pedro is excited to present his unique take on tapas, main courses, and Caribbean cocktails/Mocktails in a one-of-a-kind neighborhood eatery in Minneapolis & the Midwest.
